Small Scale Dairy Processing

Course Description
This course introduces the key principles of milk processing on small farms, focusing on hygienic practices, infrastructure requirements, legal compliance, and production of safe, high-quality dairy products. Participants will learn about hygienic standards, raw milk quality assessment, pasteurization, product labelling, and the registration and approval process for on-farm production. Through practical exercises, the course supports farmers and small-scale processors in developing skills needed to ensure product safety, meet regulatory demands, and add value to their dairy production. This course is designed for small-scale dairy farmers, artisanal producers, students, and rural entrepreneurs interested in safe, legal, and quality milk processing on the farm.
