FS33023 Milk Production and Quality for Processing (5 credits)

Module in 3rd year of BAgrSc (Hons) (Agricultural Science) [CK412]

Introduction to the composition and processability of milk and dairy products. The impact of seasonality, feeding regime, breeding strategies and animal husbandry practices on milk composition, product quality and functionality. Milk handling, intake and analysis. Milk microbiology, contaminants and residues (chlorates, antibiotics, somatic cells). Processing technologies and unit operations used for heat treatment, standardisation, fractionation, concentration and drying of milk and dairy products.
