Dairy Processing Technologies (Tehnologii in industria laptelui)

Course Description

The course presents an overview of the main processing technologies in relation with milk safety and quality characteristics. Dairy chemistry and microbiology is introduced in relation with the processing parameters and the quality characteristics of the dairy products. Technologies for obtaining HTST, ESL, UHT milk, fermented dairies, concentrated and dry products, cheese, butter and ice-cream are discussed in detail. Side streams valorization opportunities are indicated next to good hygiene and safety practices. Laboratory work associated includes dairy products analysis and the working skills are built during practical work in Dairy Pilot Plant.
