Dairy processing Machine Operator Certificate (CQP Conducteur de machine dans la transformation laitière)

Our course:
The Dairy Processing Machine Operator operates one or more mechanised (or sometimes automated) machines to manufacture or package dairy products. They operate their machine(s) in compliance with safety, quality, hygiene, environmental and productivity requirements, while guaranteeing the quality of the product obtained. Compliance with these requirements is all the more important as the machine operator works with milk, which is a particularly sensitive living material. Milk degrades when it comes into contact with air, light and ambient heat, and reacts very sensitively to inputs.
Learning outcomes:
1.Describe the structure of milk fat and the protein composition of milk
2.Explain the casein micelle structure and the role of casein in the acid and enzyme inducedcoagulation of milk
3.Describe the structure of lactose and its key reactions in milk
4.Discuss the physical properties of milk, their measurement, and technological significance
