How to formulate your ice creams (Savoir formuler ses glaces)

Our course:
The course covers ice cream legislation, ingredients and their roles, and the use of spreadsheets to formulate recipes. Practical applications include the production of sorbets and ice creams, as well as mix control. Ice cream production is followed by sensory evaluations. The course ends with a summary and an assessment.
Learning outcomes:
1.Identify the specific roles of ingredients in the different ice cream families.
2.Use analytical tools and spreadsheets to calculate the composition, nutritional value and cost of ice creams.
3.Create and produce an ice cream recipe using the ingredients.
4.Prepare mixes and make ice creams, adjusting as necessary using the tools available.
