Course Description

The course is aimed at students on the Animal source food technology programme. The aim of the course is to acquire theoretical and practical knowledge about the production of different types of cheese. The theoretical part includes lectures on the classification of cheese, the stages of cheese production and the factors influencing them. The practical part includes the production of different types of cheese in a small dairy and laboratory analyses of the composition of the cheese and the ripening parameters.
